Burdock root is a vegetable native to northern Asia and Europe that is now grown throughout the United States. The root is from burdock, a genus of weed that is covered in spores and can grow to over 4 feet tall. The roots of the plant are also believed to be the most useful part. It is characterized by its large, dark, heart-shaped leaves and purple flowers that bloom in spring and is known for its incredibly nutty taste. It is related to sunflower and belongs to the sunflower family. Burdock root has been a huge part of traditional Chinese medicine for hundreds of years and has recently been investigated for its health benefits in clinical trials. We now know that burdock root is both food and medicine.

In a clinical study of 36 people with knee osteoarthritis, drinking three cups of burdock tea a day significantly reduced inflammation. Similarly, Arctiin, a burdock polyphenol, decreased levels of inflammatory substances (TNF-alpha, IL-1beta, and IL-6) in mice. While this is exciting news, more clinical studies on larger populations are needed to establish a stronger correlation.
Inhibits some types of cancer
Not only does the burdock root purify the blood, but it has also been shown to inhibit certain types of cancer. In some studies, laboratory studies have shown that burdock root stops bacteria and fungi from growing. Researchers from China found that a component of burdock known as arctigenin can slow and even stop the growth of cancer cells and prevent it from spreading to other parts of the body.
