How to Make Brave Banana Cherry Teacake Recipe.

ingredients

  • ¾ cup of white whole wheat flour plus in addition to dusting
  • ½ cup of oatmeal
  • 1 tablespoon of baking powder
  • 1/8 teaspoon salt
  • 3 tablespoons of chopped walnuts
  • 2 tablespoons of unsweetened dried cherries, chopped
  • 2 ripe Dole bananas, 1 peeled and mashed (approx. ½ cup), 1 peeled and cut into thin slices
  • 1/3 cup oat milk
  • 3 tbsp natural butter spread with olive oil, melted
  • 3 tablespoons of avocado oil
  • ¼ cup of almond butter
  • Honey for serving (optional)

Directions:

  1. In a large bowl, whisk together the flour, baking powder, and salt; Stir in walnuts and cherries. Whisk the banana puree, milk, and butter spread in a medium-sized bowl. Stir the banana mixture into the flour mixture until incorporated; Place on a lightly floured work surface and knead until the dough comes together. Divide the dough into 8 pieces; roll into balls and shape into ¼ inch thick slices.
  2. Heat 1½ tablespoons of oil in a large non-stick pan over medium heat. Add 4 slices of dough; Cook for 8 minutes or until golden brown, turning once. Repeat with the remaining 1½ tablespoons of soil and 4 slices of pastry. Makes 8 bannocks.
  3. Serve bannocks with almond butter and remaining banana slices; Drizzle with honey if you like
